QUICK AND EASY OVEN STEW | |
1 - 1 1/2 lbs. stew beef 3-4 carrots, cut up 1 jar onions, drained 1 (16 oz.) can stewed tomatoes (12 oz. frozen peas, add later) 1/2 pkg. McCormick Beef Stew Seasoning Mix 2 tbsp. instant tapioca Salt and pepper 3 c. boiling water Cut beef into bite size pieces. No need to brown. Put in bottom of large casserole dish. Add carrots, onions and tomatoes. Sprinkle on the tapioca, salt and pepper. Mix the seasoning mix into 1 cup of boiling water and pour into casserole. Add as much of the remaining hot water as you need to cover ingredients well. Cover and bake in 250 - 300 degree oven for about 3 hours. Just before serving, cook frozen peas and add. Is tasty served over rice. Individual servings freeze well in small plastic dishes and can be heated in top of double boiler. Wonderful easy meal for people who live alone. |
