QUICK OVEN PANCAKE 
2 tbsp. butter
1/4 c. whole wheat flour
1/4 c. unbleached flour
1/2 c. milk (room temperature)
2 well beaten eggs (room temperature)

Preheat oven to 425 degrees. Place butter in 9 inch iron skillet or oven proof pan and melt in oven. Place flours in medium sized bowl; make a well in center and pour in milk. Beat eggs into batter.

Don't break up lumps. Pour mixture into prepared hot skillet and back into oven immediately. Bake for 15 minutes or until lightly brown and puffed. Serve hot with syrup or fruit.
