DANISH PASTRY 
1 c. cold milk
1 egg
10 cardamom seeds
1 pkg. yeast
1 1/2 tbsp. sugar
1/4 c. warm water
1/2 tsp. salt
1 c. softened butter
3 c. flour

Sprinkle yeast over warm water and let stand 10 minutes. Then place in a bowl with the milk, egg, cardamom, sugar and salt; mix well. Add the flour and work into a dough stiff enough to handle.

Place dough on a floured board and roll into a square. Place the butter in the center of square and fold the sides and ends over the center. Roll out and fold in this manner 6 times. Place in refrigerator until 2 hours before needed.

Roll lightly, cut into strips and make into twists or figure 8's. Place on greased baking sheet and let rise in a warm room. Brush with melted butter and bake about 8 minutes at 400 degrees.

Make a thin frosting of beaten egg white and sugar; brush over pastry while they are still hot.
