BLACK - EYED PEA CORN BREAD 
1 c. cornmeal
1/2 c. flour
1 tsp. salt
2 eggs, lightly beaten
1 c. buttermilk
1/2 c. Wesson oil
1 med. onion, chopped
2 jalapeno peppers, chopped
3/4 c. drained corn
1 lb. browned hot sausage
1/2 lb. grated cheddar cheese

Add last 1 cup cooked black-eyed peas with jalapenos. Mix in order given. Cook at 350 degrees for 45 minutes.
