STIR FRY ENTREE 
2 c. meat chunks
1 c. snow pea pods
1 c. carrots
1 c. celery
1 s. can water chestnuts
1/2 c. onion pieces
1 c. Bok Choy (optional)
2 tbsp. chopped ginger root
1/2 c. mushrooms (optional)
1/2 c. nuts

Brown meat (chicken, pork, beef, shrimp) in a little oil. Add vegetables - carrots and celery should be cut in 2-inch strips. Stir over medium heat 5 minutes. Add sauce (see below) and ginger root. Simmer approximately 10 minutes.

Add mushrooms, fresh or canned, and nuts (cashews, peanuts, or almonds). Serve with steamed rice. Serves 4.

SAUCE:
1/2 water
1/2 soy sauce
2 tbsp. lemon juice
Cornstarch

Simmer water, lemon juice, and soy sauce. Add cornstarch to thicken.

NOTE: Commercial sauce can be used.
