STIR-FRIED NOODLES 
1/2 lb. cooked noodles, thin spaghetti
1/2 c. shredded lean meat, pork, beef, or chicken

#1:
1/2 tbsp. cornstarch
1/2 tbsp. cooking wine or sherry
1/2 tbsp. soy sauce

Also will need:

6 (1/2 inch pieces) green onions
3 tbsp. oil

#2:
1/3 c. bamboo shoot, fresh or canned, shredded
3 tbsp. carrot, shredded
3 tbsp. presoftened mushrooms, shredded

Also will need:

1/4 lb. spinach
1/2 c. stock

#3:
1 tbsp. soy sauce
1/2 tsp. salt
Dash of pepper

Cook the noodles as directed on the package.

1. Add #1 to the meat and marinate for 20 minutes. Tear the spinach into 2 inch pieces.

3. Heat the wok then add 3 tablespoons oil. Stir-fry the meat until it changes color; move it aside. If necessary, add oil to stir-fry. Add the onions; stir-fry until fragrant. Add #2; stir-fry lightly. Return the meat to the center of the wok. Add #3 and bring to a boil; add the noodles and spinach. Lightly toss to mix together. Remove and serve. Serves 2.
