CHOCOLATE SAUERKRAUT CAKE 
2 1/4 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 1/2 c. white sugar
2/3 c. shortening
3 eggs
2/3 c. chopped sauerkraut, cut fine with scissors, rinsed and drained
1/2 c. chopped nuts
1/2 c. cocoa
1 1/4 tsp. vanilla
1 c. water

Sift together flour, baking powder, baking soda, salt and cocoa.

Cream sugar and shortening until fluffy. Add vanilla and blend. Add eggs one at a time, beating after each addition. Add dry ingredients, alternating with water and beat until smooth after each addition. Now, add sauerkraut and nuts, mix thoroughly.

Put in greased and floured 13" x 9" pan. Bake at 350 degrees for 35 minutes.

Frost like a German chocolate cake or with fudge frosting.
