MARIE GOLETZ' CHOCOLATE
SAUERKRAUT SURPRIZE CAKE
 
1/2 c. butter
1 1/2 c. sugar
3 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. cocoa powder
1 c. water
8 oz. sauerkraut, rinsed, drained and chopped

Cream butter and sugar. Beat eggs in one at a time. Add vanilla. Add sifted dry ingredients alternately with water. Beat after each addition. Stir in sauerkraut. Pour into a well-greased tube pan at 350 degrees for 40-45 minutes and cool in pan.

If you want to make a layer cake, bake for 30 to 35 minutes and also cool in pans. The sauerkraut adds moistness like coconut but NONE of the flavor.
