FRIED GREEN TOMATOES 
4-6 med. green tomatoes (sliced 1/4 inch thick)
Flour
2 eggs (beaten)
1 c. cracker crumbs
1/2 tsp. black pepper
1 tsp. oregano
1/2 tsp. basil
Vegetable oil for frying

Mix pepper, oregano and basil with cracker crumbs. Put in a bowl. Shake or dredge tomato slices in flour. Dip in beaten egg, then in seasoned cracker crumbs.

Heat a thin coat of oil in a skillet over medium high heat. Cook tomato slices about 3 or 4 minutes on each side or until golden brown. Add vegetable oil as necessary.
