BANANA OATMEAL BREAD 
2 1/4 oz. quick cooking oats, uncooked
1 c. minus 1 tbsp. flour
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
2 ripe bananas, mashed
2 eggs
2 tbsp. plus 2 tsp. oil
1/2 tsp. vanilla
1/4 c. skim milk
8 pkgs. Sweet & Low

Preheat oven to 350 degrees. In medium bowl, combine flour, oats, baking powder, and cinnamon. Mix well. Mash bananas in large bowl and combine with remaining ingredients. Beat until blended. Add dry ingredients, half at a time, beating until blended. Spoon into a 4 x 8 inch loaf pan that has been sprayed with Pam. Bake 35 to 40 minutes until golden. Cool in pan 10 minutes, then invert onto a rack to finish cooling.
