This bread is slightly sweet and is good served with fresh fruit for breakfast.

1/2 cup (1 stick) butter (at room temperature)
1/4 cup honey
2 eggs
3 bananas, mashed
1/4 cup buttermilk
1 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup rolled oats
2 cups whole wheat flour
1 cup pecans, broken

Preheat oven to 350°F.

In a medium size bowl, cream together butter and honey until mixture is smooth. Beat in eggs, one at a time. Stir in bananas, buttermilk and vanilla. When well blended, mix in baking powder, baking soda and salt; then blend in oats, flour and pecans until all ingredients are well combined.

Turn mixture into a buttered loaf pan 9x5x3-inches. Bake at 350°F for 55 minutes or until a toothpick inserted in center comes out clean. Remove from pan and cool on wire rack. Serve warm or cooled.
