FRIED RICE WITH EGG 
1 egg, beaten
6 shelled shrimp
1/3 c. diced mushrooms
2 tbsp. chopped green onions
3 tbsp. peas (fresh or frozen), thawed
2 1/2 c. steamed rice
1/2 tsp. salt
Dash of pepper
2 tbsp. oil

Heat the wok, then add 2 tablespoons oil. Stir-fry the egg until it solidifies. Add salt, pepper, and shrimp, lightly stir-fry. Add the steamed rice and other ingredients remaining. Stir-fry until the rice is fried. Serve.

Method for preparing steamed rice. If a rice cooker is unavailable, rinse the rise (1 1/4 cups); drain. Put the rice and 1 1/4 cups water in a saucepan and let stand for about 30 minutes. Bring to a boil over high heat. Allow to boil for 1 minute. Cover with a tight-fitting lid; lower the heat and cook for 20 minutes. Turn off heat; let stand for 10 minutes.
