PUMPKIN MUFFINS 
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 eggs, lightly beaten
2 c. sugar
1 c. pumpkin
1/2 c. oil
1/2 tsp. vanilla

In large mixing bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. Set aside. In small mixing bowl, combine eggs, sugar, pumpkin, oil, and vanilla. Mix well. Add liquid to dry ingredients. Stir until just moistened. Bake at 350 degrees for 20 to 25 minutes. Cool in pan 3 to 4 minutes. Makes about 2 dozen muffins.
