PANCAKES OR WAFFLES 
2 c. flour
2 tbsp. sugar
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
2 c. buttermilk
2 eggs, beaten slightly

Sift dry ingredients together. Mix eggs and buttermilk together. Add to dry ingredients. Mix until flour mixture is moistened. Mixture will still be lumpy. Bake on a hot, lightly greased griddle. Turn pancakes when bubbles appear on surface. NOTE: For waffles, separate eggs. Whip egg whites until stiff peaks form. Fold egg whites into remaining ingredients. Bake in heated waffle iron.
