BAKED MUSHROOM CASSEROLE | |
1/2 lb. mushrooms, chopped fine 1 tbsp. grated onion 4 tbsp. butter 1/2 tsp. salt 1/4 tsp. pepper 1 tbsp. flour 2 tbsp. Gruyere cheese 2 egg yolks 1 c. heavy cream 2 tbsp. bread crumbs or wheat germ 2 egg whites, well beaten Combine mushrooms, onion, 2 tablespoons butter in small heavy pan; cover and simmer, stirring often until mushrooms are tender. Season with salt and pepper. Stir in flour and cheese. Place in baking dish. Beat together egg yolks and cream; pour into dish. Fold in egg whites. Sprinkle with crumbs. Melt remaining butter and pour over crumbs. Bake in 400 degree oven for 40 minutes until done to a golden brown and set. A good luncheon dish. |
