A ZUCCHINI TREAT 
1 med. zucchini
1 c. fine bread crumbs
1/2 c. Parmesan cheese
1 lg. egg
1 tsp. salt
1 tsp. oregano
butter

Mix bread crumbs, cheese, oregano and salt. Slice zucchini very thin diagonally. Beat egg until frothy. Dip zucchini in egg then roll in bread crumb mixture. Fry in butter on medium heat for about 4 or 5 minutes each side, until golden brown. Remove to drain on paper towels. (This is also delicious with yellow squash, eggplant or green tomatoes.) The secret is - the vegetables must be cut thin.
