ALASKAN ZUCCHINI MARMALADE | |
1 c. water 4 c. sugar 6 c. grated peeled zucchini 1/2 c. lemon juice 1 c. crushed pineapple 1 lg. chopped orange (with peel) 2 (3 oz.) pkg. orange Jello or 1 lg. pkg. Boil zucchini for 10 minutes, remove from heat and drain. Add sugar, lemon juice, pineapple and orange, boil 10 minutes, remove from heat, add Jello. Cool and pour into jelly jars, seal. Variations: Peach - substitute peach flavored Jello, and fresh or 1 cup canned chopped peaches for orange. Strawberry - substitute strawberry Jello and fresh or 1 cup pureed frozen strawberries well drained for orange. |
