ALASKAN ZUCCHINI MARMALADE 
1 c. water
4 c. sugar
6 c. grated peeled zucchini
1/2 c. lemon juice
1 c. crushed pineapple
1 lg. chopped orange (with peel)
2 (3 oz.) pkg. orange Jello or 1 lg. pkg.

Boil zucchini for 10 minutes, remove from heat and drain. Add sugar, lemon juice, pineapple and orange, boil 10 minutes, remove from heat, add Jello. Cool and pour into jelly jars, seal.

Variations: Peach - substitute peach flavored Jello, and fresh or 1 cup canned chopped peaches for orange.

Strawberry - substitute strawberry Jello and fresh or 1 cup pureed frozen strawberries well drained for orange.

Awesome basic recipe! You are limited only by your imagination and the flavors of jello you can find. I have made orange, strawberry, blueberry, peach, watermelon, mango and cherry lemonade. My kids love it!!

I used 2 large oranges and only 1 pkg orange Jello (definitely use the JELLO brand). Fabulous!

Absolutely fabulous!! I discovered this recipe when I first started canning, about four years ago. Since then I have made some every year and I have experimented with different flavors... You're only limited by the flavors of jello you can find (which are almost limitless anymore). So far I have made orange, peach, strawberry, blueberry, cherry lemonade (with cherries), and mango (SO yummy heated up over ice cream!!). I already have plans for next summer to try watermelon and another batch of cherry lemonade - with lemons this time - these are request from my kids, ages 7 & 9!! My nine year old likes this better than store bought jellies - I don't even buy them anymore, I use this for school lunches.
