APPLE PANCAKE 
2 cooking apples, cored & peeled
3 tbsp. sugar
1 tsp. cinnamon
3 tbsp. butter
3 tbsp. flour
1/4 tsp. baking powder
Pinch of salt
3 tbsp. milk
2 egg yolks, lightly beaten
2 egg whites
3 tbsp. sugar
Sour cream

Preheat oven to 400 degrees. Cut apples into 1/4" slices. Combine sugar and cinnamon. Melt butter in a heavy 10" skillet, and stir in sugar mixture. Arrange apples in skillet and cook for 5 minutes. Combine flour, baking powder and salt in a bowl. With whisk, beat in milk and egg yolks. In another bowl beat egg whites with 3 tablespoons sugar until peaks form. Fold into flour mixture, pour over apples. Bake in 400 degree oven for 10 minutes. Invert on platter and serve with maple syrup or sour cream.
