APPLE PUFF PANCAKE 
2 eggs
1/2 c. flour
1/4 tsp. salt
1/2 c. milk
4 c. apple slices, peeled
1/4 c. brown sugar
2 tsp. cornstarch
1/4 tsp. cinnamon
Cheddar cheese, shredded

Combine eggs, flour, salt and milk; beat until smooth. Heat oven- proof skillet in 450 degree oven until hot. Coat skillet with 1 tablespoon butter; immediately add batter. Bake on lowest shelf in oven for 10 minutes. Saute apples in 2 tablespoons butter until tender. Add combined brown sugar, cornstarch and cinnamon. Spoon into pancake. Sprinkle with cheese.
