CHANTICA'S PANQUECA SUECA (PUFF
PANCAKE)
 
3/4 c. flour
1/4 c. butter
3 eggs
1 1/2 c. milk
6 tbsp. sugar (white or brown)
3 c. sliced fruit
Sour cream or yogurt

Preheat oven to 425 degrees. Place butter in 8-9 inch cast iron skillet and put in hot oven until melted and bubbling hot. Meanwhile add all ingredients together in a bowl and mix well. When butter has melted remove pan and quickly add batter to boiling melted butter in skillet. Bake 30 minutes at 425 degrees or until Panqueca puffs up forming a cavity in center. Remove from oven and fill immediately with slice fruit (Panqueca will deflate like a souffle). Serve with yogurt or sour cream. Consistency is like a custard. When chilled it's like flan.
