PUFF UP PANCAKES 
1/4 c. butter
1/2 c. milk
1/2 c. flour
Pinch of cinnamon
2 eggs
Powdered sugar

In a small saucepan melt butter. Pour melted butter into a 9" pie plate. In a medium size bowl, mix flour, eggs, milk and cinnamon together with a fork (it will be a bit lumpy). Pour over butter in pie plate. Bake at 425 degrees for 20 minutes until golden brown and puffy. (They puff up in the oven!) Take out of oven and sift powdered sugar on top. Serve with maple syrup on top with any kind of fruit.
