PUFF-UP PANCAKES 
2 tbsp. butter
1/2 c. flour
2 eggs
1/2 c. milk
Pinch of cinnamon and nutmeg
1/2 tsp. vanilla
Powdered sugar

Melt butter and pour it into a 9-inch pie plate. In a medium bowl, mix flour, eggs, milk, spices and vanilla with a fork; there will be some lumps. Pour over butter in pie plate. Bake at 425 degrees for 20 minutes until golden brown and puffy. Remove from oven, sift powdered sugar on top. Serve with maple syrup or any kind of fruit. 4 servings.
