HERB CHICKEN CASSEROLE 
2 sm. fryers, skinned & cut up
1/3 c. olive oil
3 tbsp. fresh lemon juice
1/4 c. chicken broth (I use chicken bouillon cube)
5 tbsp. grated Parmesan
5 tbsp. grated Romano cheese
1/2 tsp. each oregano, basil, salt
Bay leaf
1/8 tsp. powdered garlic

Place fryer pieces in casserole. Pour olive oil over top. In small bowl combine remaining ingredients using only 1/2 of cheese. Pour mixture over chicken, marinate overnight. Sprinkle remaining cheese over top. Bake, uncovered at 350 degrees for 30 minutes. Brown under broiler until lightly browned.
