BLUEBERRY COFFEE CAKE 
1 pkg. muffin mix (8 muffin size)
1/4 c. milk
1 egg
2 tbsp. shortening (melted)

Reserve 1 tablespoon mix for topping.

Mix all ingredients together and pour into 8x8x2 baking dish.

TOPPING:

1/4 c. brown sugar
1/4 c. nuts
1 tbsp. muffin mix
1 tbsp. butter

Combine and sprinkle over batter. Bake at 350 degrees for 20 minutes until light brown.
