PEACHES AND MINCE PIE 
1/2 c. all-purpose flour
1/4 c. firmly packed brown sugar
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
2 tbsp. oil
1 tbsp. milk
1 (8 oz.) jar prepared mincemeat
1 (6 oz.) can sliced peaches, drained
1 (9 inch) unbaked pie shell

Preheat oven to 425 degrees. In a small bowl, mix flour, sugar, soda, cinnamon and salt. Stir in oil and milk until crumbly. Spread mince meat in bottom of pie shell. Sprinkle with half of crumb mixture. Arrange peaches in 2 circles on top of pie shell. Sprinkle with half of crumb mixture.

Arrange peaches in 2 circles on top of pie. Sprinkle with remaining crumbs. Bake 15 minutes. Reduce temperature to 350 degrees and continue baking for 25 to 30 minutes or until crust is browned and filling is set. Cool before cutting. Serves 6 to 8.
