PINEAPPLE MINCE PIE 
2/3 c. sifted flour
1/2 c. brown sugar (packed)
1 tsp. cinnamon
1/4 tsp. salt
1/4 c. butter
2 tbsp. grated cheddar cheese
1 (15 1/4 oz.) can crushed or pineapple tidbits
1 (28 oz.) jar prepared mincemeat
1/3 c. chopped nuts

Combine flour, brown sugar, cinnamon and salt. Cut in butter and cheese to form crumb mixture. Drain and discard 1/4 cup of pineapple syrup, combine remainder with mincemeat. Turn into unbaked crust. Sprinkle with cheese crumb topping. Sprinkle with nuts. Bake below center of oven at 425 degrees until it starts to brown. Reduce heat to 350 degrees for 25 to 30 minutes longer.
