ORANGE BEETS 
3 (1 lb.) cans sm. whole beets, drained, reserve liquid
2 tbsp. cornstarch
1 1/4 c. light brown sugar
1 (6 oz.) can frozen orange juice concentrate
6 oz. drained beet liquid
3/4 c. cider vinegar
1 tbsp. butter

Combine cornstarch and sugar in a saucepan. Blend in orange concentrate, then beet liquid, and vinegar. Cook, stirring constantly, until thick and clear. Add butter and beets, reheat and serve.
