SPINACH BALLS | |
2 (10 oz.) pkgs. chopped frozen spinach 1 c. finely chopped onion 4 eggs, slightly beaten 3/4 c. melted butter 1 tsp. garlic salt 1/2 tsp. thyme 1/2 c. grated Parmesan cheese 2 c. cornbread stuffing mix Cook spinach as directed on package; drain well. Add remaining ingredients; mix well and chill until cool. Shape into small balls, about 1" in diameter. Bake at 350 degrees for 25 minutes or until lightly browned. Serve hot. Yield: 6 dozen. |
