SPINACH BALLS 
2 (10 oz.) pkgs. frozen spinach
2 c. herb seasoned stuffing mix
1 lg. onion, finely chopped
6 eggs, well beaten
3/4 c. butter, melted
1/2 c. grated Parmesan cheese
1 tsp. black pepper
1 1/2 tsp. garlic salt
1/2 tsp. thyme

Cook spinach according to package directions. Drain and squeeze to remove all liquid. Combine with all other ingredients. Roll in small balls. (May be frozen at this stage.) Bake at 325 degrees 15 to 20 minutes. Do not over bake.

NOTE: Broccoli may be substituted for spinach.
