SPINACH BALLS 
2 pkg. frozen chopped spinach
3 c. herb stuffing mix
1 lg. chopped onion
6 eggs, well-beaten
3/4 c. butter, melted
1/2 c. Parmesan cheese
1/8 tsp. garlic salt
1/8 tsp. pepper
1/2 tsp. thyme

Cook and drain spinach; squeeze out any moisture; put aside. Mix together remaining ingredients. To this mixture add spinach; mix well. Form small balls (about 1/4 teaspoon) in the palm of your hand; place on lightly greased cookie sheet; bake at 325 degrees for 15 - 20 minutes. Serve with toothpicks. Makes approximately 60.

They can be made ahead of time; place spinach balls on cookie sheet or foil and freeze. When frozen, place in zippered freezer bags. Take out of freezer a short time before baking.
