PUFFS OF PASTRY | |
1/2 c. butter or shortening 1 c. water, boiling 1 c. all purpose flour 1/2 tsp. salt 4 eggs Melt butter in water. Sift flour and salt together. Add water mixture. Cook medium heat, stirring constantly until smooth, approximately 2 minutes. Cool 1 minute. Blend eggs into mixture one at a time until smooth. Drop dough by rounded tablespoons onto greased baking sheets. Bake 20 minutes until golden. Turn off oven. Prick puffs with knife to let steam escape. Leave puffs in oven 10 minutes. Let cool. Split them gently in half. Fill with item of your choice such as egg salad or tuna salad for appetizers or pudding for use as a dessert. Makes 16 to 18 puffs. |
