CORNMEAL PUDDING 
1 cup cornmeal
2 cups milk
1 tbsp. vanilla
1 tbsp. cinnamon
1 cup raisins
1 egg
1 cup chopped walnuts (optional)

Combine all ingredients in bowl, transfer to a medium pot and cook over LOW heat, stirring frequently until it starts to thicken.

Transfer to square dish, cover with Saran or plastic wrap and chill in refrigerator until firm.

Makes 4 servings.
