CHICKEN PILAF SALAD 
3 c. cold rice
1 1/2 c. chicken, cooked
1 1/2 c. celery, diced
1 (16 oz.) can peas, drained
2 tbsp. bell pepper
1 c. mayonnaise
1 (8 oz.) can pineapple tidbits, undrained
3 tbsp. cashews, broken
Salt & pepper to taste

Mix rice with chicken and vegetable. Mix mayonnaise with undrained pineapple, toss with rice. Season to taste. Chill. Top with brown cashews before serving.
