COCONUT MACAROONS | |
1 1/3 c. flake coconut 3/4 c. chopped almonds or pecans 1/3 c. sugar 3 tbsp. flour 1/8 tsp. salt 2 egg whites 1 tsp. almond extract Preheat oven to 325 degrees. Mix together coconut, nuts, sugar, flour and salt. Stir in egg whites and almond extract; mix well. Drop teaspoon onto greased baking sheet. Bake 20 minutes or until edges are golden. Remove from baking sheet immediately. Yields: about 2 dozen. |
