POTATOES WITH CELERY, TOMATOES
AND ONIONS
 
5 med. potatoes, peeled and cut in thick slices
10 pieces of celery, about 4 inches long each
2 med. onions, sliced
2 c. chopped tomatoes
3 tbsp. vegetable oil
1 tsp. dried oregano
Salt and freshly ground black pepper to taste
2 tbsp. finely chopped Italian parsley

Distribute all the vegetables in a shallow baking dish. Pour oil and seasonings over them and mix in. Cover and bake in a preheated 450 degree oven about 30 minutes, or until potatoes are tender. Makes 5 to 6 servings.
