TOMATOES & ONIONS 
1 qt. of cherry tomatoes
1 lg. onion, diced
2 tbsp. parsley
2 tbsp. black pepper
2 tbsp. garlic salt (or powder)
2/3 c. vinegar
1/3 c. olive oil (or canola oil)
1 tbsp. sugar
1 (12 oz.) pkg. shredded Mozzarella cheese
1 sm. head of lettuce

Slice tomatoes in halves or quarters. Mix with diced onions. Mix together parsley, pepper, salt and vinegar. Pour over tomato and onions. Marinate for an hour in the refrigerator. Stir occasionally.

Drain off the vinegar mixture and set aside. Place tomatoes and onions on lettuce. Add sugar and oil to vinegar mixture and drizzle over tomatoes, onions and lettuce. Top with Mozzarella cheese (some may want to substitute with cheddar cheese). Serve immediately.
