ESCALLOPED EGGPLANT | |
1 med. eggplant 1 c. cracker crumbs 1/4 tsp. pepper 1/4 c. butter 1 tbsp. ground onions 1/8 tsp. monosodium glutamate 1 (10 oz.) can mushroom soup 2 eggs Peel eggplant and dice. Soak in salt water 1 hour. Drain and cook in small amount of water until tender. Drain again and mash. Mix all ingredients together. Put in greased pan and set in pan of water. Bake at 300 degrees about 45 minutes or until set. |
