CARROT CAKE | |
1 1/4 c. oil 2 c. sugar 4 eggs 1 1/2 tsp. baking soda in 1/3 c. buttermilk or 1/3 c. milk with a little vinegar 3 c. flour 1/4 tsp. salt 1 tsp. cinnamon 1 tsp. lemon extract 3 c. grated carrots Mix in order given. Bake at 300 degrees about 1 1/2 hours. Test with toothpick. I bake in bundt cake pan. ORANGE GLAZE: 1/2 can frozen orange juice 1/2 c. sugar Pour orange juice and sugar in saucepan; bring to boil. Set aside and cool. Pour on cake. |
