INDIVIDUAL FRUIT CAKE 
1/2 c. orange juice, unsweetened
Liquid sugar substitute to equal 1 1/2 c. sugar
1 c. fresh cranberries, finely chopped or 1 c. water packed sour cherries, drained and finely chopped
1 c. seedless raisins
1 c. pecans, finely chopped
1 c. unsweetened pineapple chunks, drained and chopped
1 tbsp. grated orange rind
3 tbsp. reduced calorie butter, melted
1 1/ c. sifted all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. allspice
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Pour orange juice and sugar substitute over chopped cranberries, let stand for 1 hour. Add raisins, pecans, pineapple, and orange rind to cranberry mixture and add melted butter. Sift and measure flour, add soda, salt, allspice, cinnamon, and nutmeg; sift again. Add dry ingredients to fruit mixture and stir until thoroughly mixed. Pour mixture into 16 non-stick baking cups. Bake at 325 degrees for 30-35 minutes until lightly brown.
