MOZZARELLA POTATOES 
6 med. potatoes
4 to 5 green onions
1 stick butter
8 oz. or more grated Mozzarella cheese

Peel potatoes and cut into cubes. Boil until tender. Chop onions, including greens and saute in butter. Drain potatoes when cooked. Pour butter and onions over potatoes and mix well. Layer potatoes and grated cheese in a casserole dish, finishing with cheese. Cover. Bake at 350 degrees until cheese melts.
