MUSHROOM QUICHE | |
1 (9 inch) pie shell 4 eggs, beaten 1/2 lb. sliced mushrooms 1/4 c. green onions, sliced or 1/4 c. dry onions, chopped 1 c. shredded cheese (Swiss, Cheddar, Mozzarella) 1 c. half and half 1/4 c. grated Parmesan cheese 1/2 tsp. salt 1/8 tsp. pepper 1/2 tsp. nutmeg Prick bottom and sides of pie shell with a fork lightly. Bake for 5 minutes in a 450 degree oven for metal pans; 425 degree oven for a glass pan. Remove shell from oven and reduce temperature to 375 degrees for metal and 350 degrees for glass. In a large skillet, over medium heat, saute mushrooms and onions in butter until onion is tender. Stir in the cup of cheese and place all into the pie shell. Beat eggs and add all remaining ingredients. When well blended, pour over mushroom mixture. Bake for 35 to 40 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before serving. |
