SPECIAL CHERRY PIE 
2 (No. 1) cans pitted tart red cherries
2 1/2 tbsp. quick cooking tapioca
1/4 tsp. salt
1/4 tsp. almond flavoring
1 tbsp. lemon juice
1 tbsp. red food coloring
1 1/4 c. sugar
1 tbsp. butter

Drain cherries. Mix together 1/3 cup juice, salt, tapioca, flavoring, lemon juice, food, coloring, then cherries and 1 cup sugar. Let stand about 10 minutes. Then pour mixture into a pastry lined 9 inch pie pan. Dot with butter. Sprinkle 2 tablespoons of 1/4 cup sugar. Add top crust strips. Sprinkle with remaining sugar. Bake at 425 degrees 40 to 45 minutes. Cover with foil if crust browns to fast.
