PORK ROAST 
1 (3 to 4 lb.) pork tenderloin

Combine the following:

6 tbsp. candied ginger, chopped
1/2 c. soy sauce
2 tbsp. wine vinegar
2 cloves garlic, peeled & crushed
1/2 to 3/4 c. maple syrup

Place roast in pan. Cover with sauce. Roast, basting frequently until internal temperature is 165 to 170 degrees; about 1 to 1 1/4 hours.
