CHICKEN CASSEROLE 
1 cooked and boned chicken cut up or 2 cubed chicken
2 c. cooked peas or broccoli
1/2 lb. Cheddar cheese, shredded
1 tsp. curry powder
2 cans cream of mushrooms soup
1/2 c. bread crumbs
1/2 c. mayonnaise
1 tsp. lemon juice
1/2 c. water

In quart bowl, mix soup, mayonnaise, curry, lemon juice, and water. In the bottom of a 2 quart casserole put cooked peas or broccoli. Put in chicken pieces and pour mushroom soup mixture over the chicken. Heat in 350 degree oven about 25 to 35 minutes or until bubbly. Remove from oven, mix the bread crumbs and the cheese together and pour over hot casserole. Return to oven to brown crumbs. Serve with hot rice or mashed potatoes.
