MANICOTTI 
1 c. water
3 eggs
1 tsp. salt
1 c. sifted flour

Grease 7 inch frying pan with 1/4 teaspoon oil. Heat frying pan over moderate heat. Pour enough batter to make a thin layer on bottom of pan. Cook on one side for about 1 minute. Remove from pan. Place on flat surface and cool (wax paper). Make the rest of the pancakes the same way.

FILLING:

2 eggs
1/4 c. minced parsley
1 1/2 lb. ricotta
1/2 lb. mozzarella
1/2 c. grated Romano cheese

Spread 2 tablespoons or more on pancake. Roll and close pressing edges together. Pour a light tomato sauce on bottom of a bake pan. Place manicotti side by side in the pan. Cover with tomato sauce and some mozzarella cheese. Bake in hot oven at 400 degrees for about 10-15 minutes.
