MANICOTTI 
2 c. flour
2 1/3 c. water
4 eggs
Pinch salt
2 1/2-3 lbs. Ricotta cheese
5 eggs
Pinch salt
Spaghetti sauce
Mozzarella cheese

Beat first four ingredients with a fork. Brush frying pan with oil (rebrush with oil after several shells). Heat pan, then pour 1/4 cup batter into pan, tilting to spread evenly. Cook one side only. When pancake turns yellow all over, flip onto paper towel. When cool, store between pieces of wax paper. Makes 24.

Beat next four ingredients until smooth. Put filling onto pancakes and roll up. Put spaghetti sauce sparingly on bottom of large shallow pan. Place rolled up manicotti on sauce seam side down. Place pieces of Mozzarella on top of manicotti. Cover with more tomato sauce. Cover with tin foil. Bake in 400 degree oven for 20 minutes. Recipe serves 10 people. If can easily be cut in half - or you can prepare a full recipe and freeze it without sauce and without baking it.
