MANICOTTI 
DOUGH:

4 eggs
1 c. water
1 c. flour
1 tsp. salt

Beat eggs, water, flour and salt well; cover and let rest 2 or 3 hours. Fry by large spoonfuls like "pancakes" in Teflon or non-stick fry pan. Try not to use grease or use very little. Stack the "pancakes" like Mexican tortillas.

FILLING:

1 lb. grated Mozzarella cheese
1 lb. Ricotta
1 tsp. salt
3 eggs

Mix Mozzarella, Ricotta, salt and eggs. Place 2 tablespoons Ricotta mixture on each pancake. Roll up and place side by side in greased baking dish. Cover with your favorite spaghetti sauce. Bake in preheated 350 degree oven uncovered for 40 minutes.
