CHICKEN AND MUSHROOM RICE 
1 chicken breast
1/2 tsp. salt
2 c. water
1 c. uncooked white rice (not Minute rice)
1 (4 oz.) can mushroom stems and pieces
1 tsp. butter
1/8 tsp. pepper
1 tsp. onion flakes

Boil chicken breasts in 2 cup water, making sure to add water while cooking so as to have 2 cups of broth when finished. Remove chicken from broth and set aside to cool. Add rice to broth and cook until done. Saute mushrooms in butter until slightly browned. Dice cooked chicken.

Combine in baking dish mushrooms, chicken, onion flakes, pepper and rice. Bake 20 minutes at 350 degrees. Makes 6 generous servings at 89 calories per serving.
