CORNED BEEF HASH | |
2 1/2 c. chopped, cooked corned beef 2 1/2 c. diced, cold boiled potatoes 1 med. onion, chopped 1 tbsp. drippings, butter 1/2 c. rich milk or evaporated milk 1/2 tsp. salt 1/8 tsp. pepper Mix the beef, onions and potatoes. Heat the drippings in a large frying pan then turn the meat mixture into it. Add the milk a little at a time and spread the mixture flat in the pan. Keep over very low heat and brown in on the bottom, approximately 40 to 45 minutes. Sprinkle with salt and pepper and fold like an omelet and slip it onto a hot platter. |
