COCONUT BUTTER BALLS 
1 c. butter
1/2 c. sugar
2 tsp. vanilla
2 c. flour
1/4 tsp. salt
2 c. pecan halves
1 egg white
1 tbsp. water
1 c. coconut, more if desired

Preheat oven to 350 degrees. Cream butter, sugar, and vanilla until fluffy. Blend flour and salt; stir into creamed mixture, blending thoroughly. If dough is soft, chill until firm enough to shape.

With fingers, shape a rounded teaspoonful of dough around each pecan half to form a one inch ball. Beat egg white and water with a fork. Dip the dough in the egg white, then the coconut. Bake on lightly greased baking sheet 15-18 minutes or until lightly browned. Makes 5 dozen cookies.
